Roasted Squash and Goat Cheese Sandwich

Roasted Squash

small squash (butternut, acorn, etc.)
2 tbsp
Crystal Margarine
1/4 cup
whole fresh sage leaves

Sandwich

2 tbsp
Crystal Margarine
1/4 cup
goat cheese
2 tbsp
toasted walnuts
6 slices
whole grain bread

directions

Preheat oven to 450°F.

Slice the squash into ~1.5cm thick slices, leaving the skin on if desired.

Melt the Crystal Margarine, and add it to a large bowl with squash, sage leaves, and a pinch of salt. Toss to combine.

Roast the squash on a parchment lined sheet pan in a 450°F oven for about 20-30 minutes until lightly roasted and browned.

Grill or toast the bread, spread with a layer of Crystal Margarine, layer on pieces of roasted squash with the sage leaves on top of the bread.

Sprinkle the toast with crumbled goat cheese and toasted walnuts.
