Roasted Squash and Goat Cheese Sandwich

Makes 4 open faced sandwiches

Ingredients 

1 small Squash (Butternut, Acorn, etc)

2 tbsp Crystal Margarine

1/4 cup whole Fresh Sage Leaves

 

2 tbsp Crystal Margarine

1/4 cup Goat Cheese

2 tbsp Toasted Walnuts

 

6 Slices Whole Grain Bread

 

Assembly 

Slice the squash into ~1.5cm thick slices, leaving the skin on if desired.

Melt the Crystal Margarine, and add it to a large bowl with squash, sage leaves, and a pinch of salt. Toss to combine.

Roast the squash on a parchment lined sheet pan in a 450°F oven for about 20-30 minutes until lightly roasted and browned.

Grill or toast the bread, spread with a layer of Crystal Margarine, layer on pieces of roasted squash alongside with the sage leaves.

Sprinkle the toast with crumbled goat cheese and toasted walnuts.
