Makes 6 open faced sandwiches
Ingredients
1/2 package Medium Firm Tofu (225g)
2 tbsp Crystal Margarine
1 tsp Kosher Salt
1 tsp White Wine Vinegar
1/4 tsp Ground Black Pepper
1/4 tsp Ground Nutmeg
6 Slices French Bread
1.5 cups Mixed Sliced Tomatoes
Fresh Basil
Assembly
In a blender or food processor combine tofu, margarine, salt, vinegar, pepper, and nutmeg. Blend to a smooth paste.
Taste the whipped tofu and adjust the salt and vinegar as desired.
Toast or grill the French bread and spread a thick layer of the whipped tofu.
Top with sliced tomatoes, fresh basil, flaky sea salt, and fresh ground pepper.
Notes
This recipe makes great appetizers, use smaller crostini made from baguettes instead of french bread.
