Ingredients
1 tsp Crystal Margarine
1/2 cup feta, crumbled
1/4 cup harissa paste
1 egg
1/3 cup cucumber, diced
1/3 cup tomato, diced
1 tsp sesame seeds
Cracked black pepper
1 tsp fresh dill
1 tsp fresh cilantro (optional)
1 pita
1 tsp olive oil
Method
- Heat a non-stick pan over medium heat and melt the crystal margarine. Add the crumbled feta, allowing it to soften and start to melt slightly.
- Create a small well in the center of the feta and crack in your egg.
- Drizzle harissa, sprinkle sesame seeds, and season with cracked pepper over the feta.
- Cover the pan and cook for about a minute, letting the egg cook while the feta becomes crispy on the bottom. Be careful not to overcook the yolk.
- Once cooked, carefully place the feta egg onto a fresh pita. Garnish with diced cucumber and tomato, drizzle with olive oil, and sprinkle with fresh herbs.
