This granola is more than just oats, using coconut flakes, almond butter, and raisins to for extra texture and added yummy flavours. Preheat your oven to 300°F and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, chopped almonds, coconut flakes, raisins, cinnamon, and salt. Add the melted Crystal Margarine, honey, and almond butter. Stir until the mixture is evenly coated and well combined.
Transfer the mixture to the prepared baking sheet and press it into a compact, even layer, about 1 inch thick. This helps encourage clusters as it bakes.
Bake for 15 minutes, then rotate the pan and gently loosen the granola slightly with a fork, keeping some larger clumps intact. Return to the oven and bake for another 15 minutes, or until lightly golden and fragrant.
Remove from the oven and allow the granola to cool on the baking sheet for at least 15 minutes before breaking into clusters. Store fully cooled granola in an airtight container at room temperature.
