Fried Egg & Feta

1 tsp
Crystal Margarine
1/2 cup
feta, crumbled
1
egg
1/4 cup
harissa paste
1 tsp
sesame seeds
to taste
cracked black pepper
1
pita

Tomato & Cucumber Salad

1/3 cup
tomato, diced
1/3 cup
cucumber, diced
1 tsp
olive oil
1 tsp
fresh cilantro (optional)
1 tsp
fresh dill

directions

Heat a non-stick pan over medium heat and melt the crystal margarine. Add the crumbled feta, allowing it to soften and start to melt slightly.

Create a small well in the centre of the feta and crack in your egg.

Drizzle harissa, sprinkle sesame seeds, and season with cracked pepper over the feta and egg.

Cover the pan and cook for about a minute, letting the egg cook while the feta becomes crispy on the bottom. Be careful not to overcook the yolk.

Once cooked, carefully place the feta egg onto a fresh pita. Garnish with diced cucumber and tomato, drizzle with olive oil, and sprinkle with fresh herbs.
