Garden Fresh Cherry Tomato Pasta

You’ll find all three in this cheery and healthy Garden Fresh Cherry Tomato Pasta lightly seasoned with the fragrant aroma of basil, garlic, oregano, and sea salt. Ingredients:

  • 1.5 tbsp sea salt, plus extra to taste
  • 12 oz angel hair pasta
  • 1 pound cherry tomatos
  • Fresh ground pepper to taste
  • Small handful of fresh basil leaves, thinly sliced and divided into 2
  • 4 tbsp Crystal Margarine, melted
  • 2 garlic cloves, finely chopped
  • ¼ tsp dried oregano
  • Fresh ground pepper to taste
  • ¼ pound Fior di Latte/fresh mozzarella, thinly sliced

Directions:

  1. Bring a large pot of water to boil with 1.5 tbsp sea salt. Cook angel hair pasta until al dente. Strain and set aside.
  2. Set broiler to high with rack positioned in the middle of the oven.
  3. Toss cherry tomatos, half the basil leaves, melted Crystal Margarine, and place on a large baking pan or cast-iron skillet. Broil until tomato skins begin to crack open, about 7 minutes total.
  4. Remove pan or skillet from broiler and add garlic, oregano, plus salt and pepper to taste. Using a fork, lightly crush the tomatoes to create a saucier consistency.
  5. Toss sauce with angel hair pasta and divide onto 4 plates. Top with Fior di Latte and remaining sliced basil leaves.
