Chocolate Waffles

1 cup
brown rice flour
3/4 cup
tapioca flour
1/4 tsp
xanthan gum
2 tsp
baking powder
1/2 cup
quick oats (gluten-free)
1/4 cup
sugar
1/4 tsp
salt, fine
1/4 cup
Dutch cocoa powder
1 1/2 cup
milk
2
eggs
1/4 cup
Crystal Margarine, melted

directions

Preheat a waffle iron to 350°F.

In a large bowl, combine brown rice flour, tapioca flour, xanthan gum, oats, sugar, cocoa powder, and salt in a bowl. Mix to combine.

Make a well in the centre of the mixed dried ingredients and add the eggs and milk. Whisk to form a smooth batter.

Stir in the melted Crystal Margarine.

Lightly spray the waffle iron and spread about 1/2 cup of batter into your waffle iron. Cook for about 2-3 minutes.

Chef’s tip: feel free to use a commercial 1:1 gluten-free flour replacement in this recipe. Different flour blends need different amounts of milk, add extra milk if your batter is too thick.
