Bright, fresh, and effortlessly satisfying, this Mediterranean Halloumi Sheet Pan Dinner is a weeknight win with bold, sunny flavours. Crystal Margarine brings everything together, helping the potatoes roast up golden and tender while coating the broccolini and onions for perfectly caramelized edges. A zesty lemon-oregano glaze, made silky with Crystal, melts into the halloumi as it bakes, creating a savoury, lightly crisp centrepiece. Finished with crumbled feta, fresh parsley, and a squeeze of lemon, this easy sheet pan meal delivers big Mediterranean flavour with minimal prep—and even less cleanup.

directions
Preheat your oven to 400°F and line a large sheet pan with parchment.
In a bowl, toss the potatoes with melted Crystal Margarine, salt, and pepper. Spread in an even layer on the sheet pan. Roast for 20–25 minutes, or until the potatoes start to brown.
While the potatoes roast, toss the broccolini and sliced onions with melted Crystal Margarine, garlic, dried oregano, lemon zest, salt, and pepper. Set aside. In a small bowl, whisk melted Crystal Margarine, lemon juice, lemon zest, Dijon, honey, oregano, paprika, salt, and pepper until emulsified.
Remove the pan from the oven. Push potatoes to one side. Add the broccolini and onions to the other side. Place the halloumi slices down the centre and cover them with the lemon-oregano glaze. Return the pan to the oven and bake for an additional 12-15 minutes, or until the broccolini is tender, and the halloumi has browned nicely. For a little extra color, switch your oven to broil for the final 1-2 minutes.
To garnish, top everything with feta and parsley, and serve with lemon wedges.
