Potatoes

1 lb
baby yellow potatoes (halved)
1 tbsp
Crystal Margarine (melted)
to taste
salt and black pepper

Broccolini

1 lb
broccolini (ends trimmed)
1
red onion (sliced)
2 tsp
Crystal Margarine (melted)

lemon zest
2 cloves
garlic (minced)

dried oregano

Halloumi & Lemon-Oregano Glaze

4 slices
Halloumi cheese (or tofu)
2 tbsp
Crystal Margarine (melted)
2 tbsp
lemon juice (fresh)
1 tsp
lemon zest
1 tsp
Dijon mustard
1 tsp
honey
1 tsp
dried oregano
¼ tsp
paprika
to taste
salt and black pepper

Garnish

⅓ cup
feta (crumbled)
2 tbsp
parsley (chopped)

lemon (cut into wedges)

directions

Preheat your oven to 400°F and line a large sheet pan with parchment. 

In a bowl, toss the potatoes with melted Crystal Margarine, salt, and pepper. Spread in an even layer on the sheet pan. Roast for 20–25 minutes, or until the potatoes start to brown. 

While the potatoes roast, toss the broccolini and sliced onions with melted Crystal Margarine, garlic, dried oregano, lemon zest, salt, and pepper. Set aside. In a small bowl, whisk melted Crystal Margarine, lemon juice, lemon zest, Dijon, honey, oregano, paprika, salt, and pepper until emulsified. 

Remove the pan from the oven. Push potatoes to one side. Add the broccolini and onions to the other side. Place the halloumi slices down the centre and cover them with the lemon-oregano glaze. Return the pan to the oven and bake for an additional 12-15 minutes, or until the broccolini is tender, and the halloumi has browned nicely. For a little extra color, switch your oven to broil for the final 1-2 minutes. 

To garnish, top everything with feta and parsley, and serve with lemon wedges.
