Vegan Brownies with Macadamia Nuts

2 cups
chocolate chips (divided)
1 cup
coconut sugar
6 tbsp
Crystal Margarine (softened)
6 tbsp
brewed coffee
1 tsp
vanilla extract
3/4 cup
all-purpose flour
1 tsp
salt
1 tsp
baking powder
1/4 cup
cocoa powder (Dutch-process)
1 cup
macadamia nuts (chopped)

Preheat your oven to 350°F and line a 9”x9” baking pan with parchment paper.

Melt 1 cup of chocolate chips over a double boiler. Set aside to cool slightly. In a large mixing bowl, whisk together the Crystal Margarine and coconut sugar until combined. Add the brewed coffee, melted chocolate, and vanilla extract, then mix until smooth.

Sift in the flour, baking powder, salt, and cocoa powder and mix just until combined. Fold in the remaining 1 cup chocolate chips and the chopped macadamia nuts.

Pour brownie batter into your prepared pan and bake until the top is glossy and just barely firm, or until a toothpick inserted halfway between the edge and the center comes out with just a few crumbs attached, about 30 minutes.

Cool to room temperature, then loosen the sides with a knife and lift out with the parchment. Cut into 16 squares.
