Vegan Chocolate Cake

1 cup
Crystal Margarine (room temperature)
1 cup
almond milk
2 tsp
vanilla extract
1 cup
coffee
2 cups
all-purpose flour
3/4 cup
cocoa powder (Dutch process)
3 tsp
baking powder
1 tsp
salt

Frosting

1 cup
cocoa powder (Dutch process)
1/2 cup
Crystal Margarine (room temperature)
1 tsp
vanilla extract
1 pinch
salt
2 1/2 cups
icing sugar
1/4 cup
almond milk

Cake

Heat your oven to 350°F, then grease and flour two 9” cake pans.

In a large bowl, cream the Crystal Margarine and sugar until light and fluffy, about 2-3 minutes. Next, add almond milk, vanilla extract, and coffee, mixing until smooth. At this point, your mixture will look quite thin, and that’s perfectly okay.

In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Add the dry mixture to the wet mixture and mix the two together gently until just combined, scraping the sides of the bowl periodically. Be careful not to overmix.

Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans on a rack for 30 minutes, then turn out and cool completely before frosting. While you’re waiting, you can go ahead and prepare your frosting.

Frosting

In a mixing bowl, beat the Crystal Margarine until smooth. Add the cocoa, vanilla extract, pinch of salt, powdered sugar, and almond milk. Mix on low to bring everything together, then increase the mixing speed and whip until thick and smooth, about 1-2 minutes. Adjust the frosting by adding a bit more powdered sugar or almond milk 1 Tbsp at a time until it becomes easily spreadable.

Assembly

Place one cooled cake layer on a platter and spread about half the frosting over the top. Set the second layer upside down on top of the first layer and frost the top and sides with the remaining frosting.
