Creamy Tortellini Minestrone

4 tbsp
Crystal Margarine
1 cup
onion, diced
1 cup
carrot, diced
1 cup
celery, diced
1/4 cup
all-purpose flour
8 cups
water
1 tsp
kosher salt
2 tsp
dried oregano
1 can
kidney beans, drained
1 can
diced tomatoes, drained
1 package
fresh tortellini (250g)
1/2 cup
whipping cream
2 cups
fresh spinach

directions

In a large heavy bottomed pot add the Crystal Margarine, diced onion, celery, and carrots. Cook over medium heat for about 5 minutes, stirring frequently until veggies are softened.

Add the flour and cook, stirring frequently for about 1 minute. Slowly add the 8 cups of water, stirring constantly until the soup thickens and returns to a simmer.

Add the oregano, salt, kidney beans, and diced tomatoes. Cook at a lower simmer for about 15 minutes.

Add the tortellini to the pot and cook until the pasta is tender. Stir in cream and spinach and remove the soup from the heat.
