Apple Carrot Muffins

Wet Ingredients

1/2 cup
Crystal Margarine, melted
3/4 cup
sugar

eggs, large
1/4 cup
Milk

Dry Ingredients

1 1/2 cups
all-purpose flour
1/2 cup
quick oats
1/4 tsp
salt
1 tsp
baking powder
1 tsp
baking soda
2 tsp
cinnamon

Mix-ins

1 cup
carrot (grated)
1 cup
apple (grated)

directions

Heat your oven to 375°F and line a 12-muffin pan with paper cups.

In a medium-sized bowl, whisk the melted Crystal Margarine and sugar together until smooth. Add the eggs one at a time, mixing until incorporated, then add the milk and mix until smooth.

In a large bowl, whisk together the flour, oats, salt, baking powder, baking soda, and cinnamon. Pour the wet mixture over the dry mixture and stir until just combined, being careful not to over mix. Fold in the grated carrot and grated apple.

Divide the batter evenly among the 12 muffin cups and bake for around 20 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.

Cool your muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
