ingredients

Lemon Garlic Margarine

1/4 cup
Crystal Margarine, softened
1 tbsp
lemon juice
2 cloves
garlic, grated
to taste
salt and pepper

Rainbow Veggie Skewers

1 medium
eggplant, cut into 8 slices
1/2 medium
red onion, cut into 8 pieces
1 medium
green bell pepper, cut into 8 pieces
1 medium
zucchini, cut into 8 slices
1 head
broccoli, cut into 8 florets
1 medium
yellow bell pepper, cut into 8 pieces
1 medium
orange bell pepper, cut into 8 pieces
1 medium
red bell pepper, cut into 8 pieces
8
cherry tomatoes
to taste
salt and pepper

directions

In a small bowl, combine the softened Crystal Margarine, lemon juice, and grated garlic. Whisk until smooth and well combined. Season with salt and pepper to taste.

Preheat your grill to medium-high heat.

Thread the vegetables onto 8 skewers in the following order: eggplant, red onion, green bell pepper, zucchini, broccoli, yellow bell pepper, orange bell pepper, red bell pepper, and cherry tomato.

Brush the skewers generously on all sides with the lemon garlic margarine.

Place the skewers on the grill and cook for 5-6 minutes per side, turning periodically, until the vegetables are lightly charred on the outside and tender in the center. 

Remove from the grill, season with more salt and pepper to taste, and serve immediately.
