Makes 4 Sandwiches
Ingredients
1 can Chickpeas
1/3 cup Vegan Mayonnaise
1/4 cup Celery, diced
2 tbsp Parsley, chopped
2 tbsp Green Onions, sliced
1 tbsp Dijon Mustard
2 tsp Lemon Juice
4 tbsp Crystal Margarine
4 pieces Green Leaf Lettuce
8 slices White Bread
Assembly
Drain and rinse the chickpeas.
Pulse chickpeas in a food processor 5-6 times or until chickpeas are broken down into small pieces.
Fold in mayonnaise, celery, parsley, green onions, Dijon mustard and lemon juice.
Season with salt and pepper to taste.
Spread Crystal Margarine on the bread of your choice, top with green leaf lettuce and 1/4 of the chickpea salad mixture.
Top with a second slice of white bread spread with Crystal Margarine.
