Street Corn Salad

Heat the Crystal Margarine in a large skillet over medium-high heat until melted and shimmering.
Add the corn kernels and season with Tajín to taste. Toss once or twice, then let the corn cook undisturbed until charred on one side. Stir and repeat the charring process, continuing to cook and toss occasionally until the corn is evenly charred, about 10 minutes total.
Transfer the corn to a large bowl. Add the crumbled cheese, scallions, cilantro, jalapeño, garlic, mayonnaise, lime juice, and lime zest. Toss to combine.
Taste and adjust seasoning with additional Tajín if needed. Serve immediately.
