Rainbow Veggie Pinwheels

ingredients

Rainbow Veggie Pinwheels

4
12" flour tortillas
1 cup
Sweet Potato Hummus
1 cup
carrots, julienned
1 cup
bell pepper, julienned
1 cup
cucumber, julienned
1 cup
red cabbage, sliced
1 cup
kale, thinly sliced

directions

Lay a tortilla flat on a cutting board and spread ¼ cup of hummus on top.   

Evenly distribute ¼ cup of each vegetable over the hummus. 

Roll the wrap tightly, leaving the ends unfolded.  

Slice the wrap into pinwheels or just cut in half! 

Chef’s Tip:

  • Help the wrap stay sealed shut by placing it seam side down into a nonstick frying pan for approximately 30 seconds, this will seal the wrap shut.
